Chef D – Mushroom Soup

Mushroom Soup

Serves 8-10


1 litre of Chicken stock

2 cups of non-alcoholic sherry

2 cups chopped onions

2 cups sliced Ontario Oyster mushrooms

2 cups sliced Ontario shitake mushrooms

2 cups sliced Ontario Button mushrooms

2 cloves roasted garlic

1 tsp dried Ontario Lavender

½ cup Mascarpone cheese



In a large stock pot or Pressure cooker add all ingredients except cream.  (in the stock pot bring to boil and keep the soup on a gentle boil for 40 minutes).  In the pressure cooker bring the soup up to temperature or until red safety valve comes up.  Cook for 20 minutes.  Puree soup and add crème garnish mushroom powder.
