Pumpkin Flan
2 whole eggs
2 egg yolks
2/3 cup of pumpkin puree
1/3 cup white sugar
2 tsps of cinnamon
2/3 cup of whole milk
1/3 cup of grated Bothwell Black Truffle Monterey Jack Cheese
Optional: Caramel Sauce – 1/3 cup of white sugar melted in pan over medium heart till golden in colour
*Pour caramel sauce into small mason jars or ramekins to cover bottom, then pour in batter and place in a warm bath
Bake for 35 – 40 minutes at 350 degrees
