Tuna and Chic Pea Salad
Serves: 2 ppl as a main, 4 as a side
2 cans Gold Seal no drain white tuna
1/4 cup roasted red pepper, diced
1/4 cup sundried tomatoes, finely sliced
540ml can of chic peas, drained OR six bean blend, drained
1 Tbsp fresh basil, finely chopped
1/4 cup feta cheese, crumbled
juice of a half a fresh lemon
2 Tbsp extra virgin olive oil
In a large mixing bowl combine all ingredients and stir until well combined. Serve to your family and enjoy!
Chef’s Tip: To make a sexy little appetizer of this recipe, serve in a radicchio leaf.
