Chef D’s Gazpacho Soup

4 Elmira’s own hot house tomatoes, cut in quarters
1 red pepper, stemmed and seeded, cut into quarters
½ cucumber, rough chop
1 Tbsp of sherry vinegar or the juice of one lemon or lime
a dash of hot sauce
1 onion, chopped fine
1 clove garlic, chopped fine

Season with Salt and Pepper

 

Sautee off onion and garlic until translucent, set aside to cool.
Add all ingredients into your food processor and pulse 10 seconds.  Chill for at least 4 hours or up to 2 days serve cold.
